Spicy Shiitake Rice Bowl

SPICY SESAME SHIITAKE RICE BOWL
A sushi rice bowl with shiitakes, fried until golden brown and tossed through a sticky, spicy sesame sauce.
Ingredients:
- 1 cup sushi rice
- 1 cup water
- 200g fresh shiitake
- 1 tablespoon sesame seeds

1 teaspoon sesame oil
- 2 garlic cloves, minced
- 2 heaped teaspoons fresh ginger, finely grated
- 1 teaspoon gochujang paste (adjust based on spice preferences)

3 teaspoons soy sauce/tamari
- 2 teaspoons mirin
- Squeeze of lime juice
- 100g edamame beans
- 1 cucumber
- 1 avocado
- 2 eggs
Method:
1. Give your rice a rinse and put it in a medium pot with 1 cup of water. Cover with lid, bring to boil then turn down the heat and simmer for 15 minutes. Turn off heat and keep lid on to let rice finish cooking for 10 minutes.
2. In a small pot, boil some edamame until cooked. While boiling, slice avo and cucumber and put aside.
3. In a frying pan, toast sesame seeds and put aside in a bowl once golden. Then evenly slice shiitakes, add to pan and start with a dry fry with no oil. Once mushrooms have released a bit of moisture and start to brown, add sesame oil, garlic, ginger and fry for a 1 minute. Then add gochujang, soy sauce, mirin, a squeeze of lime and toasted sesame seeds. Keep warm.
4. Put eggs in small pot covered with cold water, boil for 3 minutes, remove from heat and peel.
5. Spoon rice into two bowls, add edamame, cucumber, avo, shittakes, eggs cut in half and enjoy! Pour a bit of extra soy sauce over rice if you feel like it.
